Thermflo Canning & Freezing Thickener
Thermflo is a modified food starch derived from waxy maize. It is a highly versatile product especially applicable in high—and low-pH food systems where exceptional tolerance to heat and shear is required.
ThermFlo is a versatile thickening agent for gravies, glazes, and fruit fillings. However, it should be used only when needed, as adding a modified starch unnecessarily can alter a dish’s consistency. Always follow directions carefully when incorporating ThermFlo into your recipes.
For canning, ThermFlo is commonly used in fruit pie fillings. To make a simple frozen peach pie filling, combine 6 pounds of sliced peaches with 2 ½ cups of sugar, ¼ cup of ThermFlo, and a dash of cinnamon and nutmeg. Let the mixture sit for about 30 minutes until it becomes juicy, then add a splash of lemon juice. To thicken, heat over medium until the mixture reaches 185°F. Quickly cool it by placing the pot in a cold water bath, stirring until cool. Portion into freezer-safe jars for easy storage and future use!
